First off, let's get the brass tacks out of the way. Evolution is not a theory, and hasn't been for centuries. Natural Selection is the only thing theoretical about Darwinian conclusions, and the ancients themselves understood that things evolved, so all modern people of good will can certainly understand that Evolution is indeed an established fact.
Ah, but the eye. Creationists point to the eye, and really, they don't even get-it how stupid their opinions on the intricacies of the human eye are, as there are other far more evolved sight organs in nature than our own, and ask ANY specialist in the field and he or she will tell you that if a deity designed the universal 'eye', then said deity would most certainly have to resemble a squid.

Creationists are invariably just as materialistic as evolutionists. The eye is not the mystery. Consciousness is the mystery which cannot be explained satisfactorily by scientists. Sure it's the brain and the senses but human consciousness is vastly more than cerebral and sensual.
